Description
Steak Fajita Quesadillas are loaded with seasoned beef, sautéed peppers and onions, and melted cheese inside crispy tortillas for a quick and satisfying meal.
Ingredients

- 1 pound skirt steak diced into 1 inch pieces
- 1 tablespoon vegetable oil
- 2 tablespoons taco seasoning
- 1 red bell pepper diced
- 1 yellow onion diced
- 1/4 cup salsa
- 1 1/2 cups cheddar cheese shredded
- 1 1/2 cups Monterey Jack cheese shredded
- 4 flour tortillas burrito size
Instructions
- Heat the vegetable oil in a large skillet over medium heat
- Place the steak in the skillet and season with taco seasoning
- Cook for 1-2 minutes per side until lightly browned
- Add the bell pepper and onion and cook for 5-7 minutes until tender and steak is cooked through
- Stir in salsa and cook for a few minutes to combine flavors
- Remove mixture from heat
- Heat a griddle or skillet over medium high heat
- Place tortillas on the surface and add cheese, steak mixture, and more cheese
- Fold tortillas in half
- Cook each side for 1-2 minutes until golden brown
- Remove, slice, and serve
Notes
- Refrigerate leftovers in an airtight container for up to 5 days
- Use flank steak instead of skirt steak if preferred
- Reheat in a skillet for best texture
