- 1 onion (diced)
- 1 red bell pepper (sliced)
- 1 cup frozen peas
- 2 tbsp vegetable oil
- 1 tbsp sesame oil
- 1 tsp chili flakes (optional)

Instructions
- Marinate the Chicken: In a small bowl, mix soy sauce, honey, garlic, ginger, vegetable oil, and chili flakes (if using). Coat the chicken with the marinade and let it sit for 30 minutes (or overnight for more flavor).
- Prepare the Rice: Rinse the rice thoroughly under cold water to remove excess starch. Spread it evenly in a large baking tray or dish.
- Assemble the Tray: Pour the chicken broth over the rice, ensuring it’s evenly distributed. Arrange the marinated chicken thighs on top, skin-side up. Add the onion, bell pepper, and peas around the chicken. Drizzle sesame oil over the veggies for extra flavor.
- Bake: Preheat your oven to 375°F (190°C). Cover the tray with foil and bake for 20 minutes. Remove the foil and bake for an additional 20–25 minutes until the chicken is fully cooked (165°F internal temperature) and the rice is tender.
- Broil (Optional): For crispy chicken skin, broil on high for 3–5 minutes, keeping a close eye to prevent burning.
- Garnish and Serve: Let the tray bake rest for 5 minutes. Garnish with fresh cilantro or green onions, and serve straight from the tray. Enjoy!
