Description

A rich peach pudding with soft sponge, sticky toffee sauce, peach filling, and buttery crumble topping.


Ingredients

Scale
  • 2 cups diced peaches
  • 2 tablespoons lemon juice
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup brown sugar
  • 1/2 cup melted butter
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 3/4 cup flour for crumble
  • 1/3 cup brown sugar for crumble
  • 1/4 cup cold butter
  • 1/2 cup brown sugar for sauce
  • 1/4 cup butter for sauce
  • 1/2 cup cream
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F and grease baking dish
  2. Cook peaches with lemon juice brown sugar and cinnamon until jammy
  3. Mix dry sponge ingredients
  4. Add butter milk and vanilla to form batter
  5. Spread half the batter into dish
  6. Add peach filling and cover with remaining batter
  7. Mix crumble ingredients and scatter on top
  8. Bake 35 to 40 minutes until golden
  9. Cook sauce ingredients until smooth
  10. Pour sauce over warm pudding and serve

Notes

  1. Use fresh or canned peaches
  2. Serve warm with vanilla ice cream
  3. Store refrigerated for up to four days
