Strawberry Cake Mix Crinkle Cookies are soft, chewy cookies made with just four ingredients. They bake up puffy with a beautiful crackled powdered sugar coating and bright strawberry flavor in just 22 minutes.

- 1 box strawberry cake mix
- 2 large eggs
- 1/3 cup vegetable oil
- 1/2 cup powdered sugar for rolling
Instructions
- Preheat oven to 375°F and line two baking sheets with parchment paper or silicone baking mats.
- In a medium bowl, stir together the strawberry cake mix, eggs, and vegetable oil until a soft dough forms.
- Place powdered sugar in a small bowl.
- Scoop about 2 tablespoons of dough and roll into a ball.
- Roll each dough ball in powdered sugar and shake off excess.
- Place cookies on prepared baking sheets about 2 inches apart.
- Bake for 10-12 minutes until puffy, dry on top, and crackled.
- Allow to cool slightly before serving or store at room temperature.
Notes
- Do not overbake as cookies will continue to set while cooling.
- For a vegan version, substitute eggs with 2 tablespoons ground flaxseed mixed with 6 tablespoons water.
- Store in an airtight container at room temperature for up to 4 days.
- Freeze baked cookies for up to 2 months.
