Description
Fresh strawberries bake beneath a buttery oat and brown sugar topping until the fruit turns thick and bubbly and the crumbs become crisp and golden.

- 2 pounds fresh strawberries, hulled and diced
- 1/4 cup cornstarch
- 1/4 cup granulated sugar
- 1 tablespoon orange juice
- 2/3 cup old-fashioned oats
- 2/3 cup all-purpose flour
- 1/2 cup packed brown sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- Vanilla ice cream, optional
- Sweetened whipped cream, optional
Instructions
- Preheat the oven to 350°F and lightly grease an 11-by-7-inch, 8-by-8-inch, or 9-inch round baking dish.
- Place the diced strawberries in a large bowl and sprinkle them with cornstarch. Stir gently to coat.
- Add the granulated sugar and orange juice, then fold gently until combined.
- Pour the strawberry mixture into the prepared baking dish and spread it evenly.
- Combine the oats, flour, brown sugar, cinnamon, salt, and vanilla in a separate bowl.
- Pour the melted butter over the oat mixture. Stir and press with a fork until thick crumbs form.
- Sprinkle the crumb topping evenly over the strawberries without pressing it firmly into the fruit.
- Bake for 30 to 40 minutes, or until the filling bubbles around the edges and the topping turns lightly golden.
- Cover loosely with aluminum foil if the topping browns before the fruit begins bubbling.
- Cool for 10 to 15 minutes, then serve warm with vanilla ice cream or whipped cream if desired.
Notes
- Add blueberries, blackberries, raspberries, peaches, or chopped apples for a mixed-fruit version.
- Use one additional tablespoon of cornstarch when preparing the recipe with frozen strawberries.
- Use any 1/2-cup combination of granulated sugar and brown sugar in the topping.
- Store covered leftovers in the refrigerator for three to four days.
- Reheat in a 325°F oven for 10 to 15 minutes for a crisper topping.
