- 1/2 cup powdered sugar
- 1/2 cup cornstarch
- 2 teaspoons vanilla extract
- 1/2 teaspoon kosher salt
- 1 1/2 cups all-purpose flour
- Cane sugar for rolling
- 3/4 cup diced fresh strawberries
- 1 tablespoon granulated sugar
- 2 to 2 1/2 tablespoons strawberry syrup
- 1 tablespoon fresh lemon juice
- 1 1/3 cups powdered sugar
- 1 teaspoon vanilla
Instructions
- Preheat oven to 325°F and line baking sheets with parchment.
- Whisk butter until light and fluffy.
- Mix in powdered sugar, cornstarch, vanilla, and salt.
- Stir in flour until dough forms.
- Roll dough into balls and coat in sugar.
- Flatten slightly and bake 18–22 minutes.
- Cook strawberries with sugar and strain to make syrup.
- Reduce syrup in microwave until thickened.
- Mix syrup with lemon juice, powdered sugar, and vanilla.
- Ice cooled cookies.
Notes
- Roll dough in sugar for easier shaping.
- Use ripe strawberries for best flavor.
- Chill dough briefly if too soft.
