Description

Buttery meltaway cookies topped with fresh strawberry lemonade icing.


Ingredients

  • 1 cup salted butter, very soft
  • 1/2 cup powdered sugar
  • 1/2 cup cornstarch
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon kosher salt
  • 1 1/2 cups all-purpose flour
  • Cane sugar for rolling
  • 3/4 cup diced fresh strawberries
  • 1 tablespoon granulated sugar
  • 2 to 2 1/2 tablespoons strawberry syrup
  • 1 tablespoon fresh lemon juice
  • 1 1/3 cups powdered sugar
  • 1 teaspoon vanilla

Instructions

  1. Preheat oven to 325°F and line baking sheets with parchment.
  2. Whisk butter until light and fluffy.
  3. Mix in powdered sugar, cornstarch, vanilla, and salt.
  4. Stir in flour until dough forms.
  5. Roll dough into balls and coat in sugar.
  6. Flatten slightly and bake 18–22 minutes.
  7. Cook strawberries with sugar and strain to make syrup.
  8. Reduce syrup in microwave until thickened.
  9. Mix syrup with lemon juice, powdered sugar, and vanilla.
  10. Ice cooled cookies.

Notes

  1. Roll dough in sugar for easier shaping.
  2. Use ripe strawberries for best flavor.
  3. Chill dough briefly if too soft.
