Description

Fresh, sweet-tart Strawberry Lemonade Popsicles made with strawberries, lemon juice, honey or agave, and water. These easy freezer pops make a bright vegan or paleo-friendly summer snack.


Ingredients

  • 3 1/2 cups fresh or frozen strawberries, thawed if frozen
  • 1/4 cup fresh lemon juice, from about 2 lemons
  • 2 to 3 tablespoons honey or agave, adjusted to taste
  • 3/4 cup water, for blending

Instructions

  1. Rinse fresh strawberries, remove the tops, and thaw frozen strawberries if using.
  2. Add strawberries, lemon juice, 2 tablespoons honey or agave, and water to a blender.
  3. Blend on high until the mixture turns smooth and pourable.
  4. Taste the puree, then add more lemon juice or sweetener if desired.
  5. Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
  6. Cover the molds with lids and insert popsicle sticks.
  7. Freeze for 3 to 4 hours, or until the popsicles feel completely solid.
  8. Run the outside of the molds under cool water for a few seconds, then gently wiggle each stick to release and serve.

Notes

  1. Use agave for vegan popsicles or honey for paleo-style popsicles.
  2. If you do not have popsicle molds, pour the mixture into small paper cups, cover with foil, poke sticks through the center, and freeze until solid.
  3. For easier unmolding, run cool water over the outside of the mold for a few seconds before pulling gently.
  4. Store frozen popsicles in a freezer-safe bag or airtight container for 1 to 2 weeks.
  5. Taste the mixture before freezing because frozen pops taste slightly less sweet than the blended puree.
