Description
Easy Strawberry Oatmeal Bars made with fresh strawberries, oats, cinnamon, and a buttery crumble topping. These bars chill firm for clean slices and work well for breakfast, snacks, or dessert.

- 1 1/2 cups quick oats or rolled oats
- 2/3 cup flour, such as spelt, white, or oat flour
- 1/2 cup sugar or xylitol
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup oil or melted butter
- 2 1/2 cups diced fresh strawberries
- 1 1/2 teaspoons cornstarch or arrowroot
- 1 tablespoon pure maple syrup or sweetener of choice
Instructions
- Preheat the oven to 350 degrees F. Grease an 8-inch square baking pan or line the bottom with parchment paper.
- In a large bowl, stir together the oats, flour, sugar, cinnamon, baking powder, and salt.
- Add the oil or melted butter and stir until the mixture turns moist and crumbly.
- Press two-thirds of the oat mixture very firmly into the prepared pan.
- In a medium bowl, stir together the diced strawberries, cornstarch or arrowroot, and maple syrup.
- Spread the strawberry filling evenly over the oat crust.
- Sprinkle the remaining oat mixture over the strawberry layer, then press down gently but firmly.
- Bake on the center rack for 45 minutes, or until the top looks lightly golden and the berry filling bubbles around the edges.
- Let the bars cool completely, then refrigerate until chilled and firm.
- Slice into 16 bars and serve plain, with peanut butter, or with a light dusting of powdered sugar.
Notes
- Chill the bars before slicing for the cleanest squares.
- Use fresh strawberries for the best texture, or thaw and drain frozen strawberries before using.
- Use certified gluten-free oats and oat flour for a gluten-free version.
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
- Freeze sliced bars for up to 2 months and thaw overnight in the refrigerator.
