Description

A refreshing strawberry peach salsa featuring ripe peaches, strawberries, basil, and a sweet orange glaze. Perfect as a fruit salad, appetizer, or topping for grilled chicken and seafood.


Ingredients

  • 1/2 pound fresh strawberries, diced
  • 1 large ripe peach, diced
  • 12 tablespoons fresh basil, chopped
  • 3/4 cup orange juice
  • 1 tablespoon granulated sugar
  • 1 tablespoon white wine vinegar
  • Pinch of salt

Instructions

  1. Wash and hull the strawberries, then dice them.
  2. Remove the peach pit and dice the peach.
  3. Chop the fresh basil and combine with the fruit in a bowl.
  4. Add orange juice, sugar, vinegar, and salt to a saucepan.
  5. Bring to a boil and cook for 15 minutes until reduced and slightly thickened.
  6. Allow the dressing to cool for several minutes.
  7. Pour the dressing over the fruit mixture.
  8. Toss gently and serve immediately or chilled.

Notes

  1. Serve with cinnamon pita chips or tortilla chips.
  2. Use as a topping for grilled chicken, fish, or shrimp.
  3. Add blueberries, kiwi, or mango for variety.
  4. Best enjoyed within two days.
