Description
A refreshing strawberry peach salsa featuring ripe peaches, strawberries, basil, and a sweet orange glaze. Perfect as a fruit salad, appetizer, or topping for grilled chicken and seafood.

- 1/2 pound fresh strawberries, diced
- 1 large ripe peach, diced
- 1–2 tablespoons fresh basil, chopped
- 3/4 cup orange juice
- 1 tablespoon granulated sugar
- 1 tablespoon white wine vinegar
- Pinch of salt
Instructions
- Wash and hull the strawberries, then dice them.
- Remove the peach pit and dice the peach.
- Chop the fresh basil and combine with the fruit in a bowl.
- Add orange juice, sugar, vinegar, and salt to a saucepan.
- Bring to a boil and cook for 15 minutes until reduced and slightly thickened.
- Allow the dressing to cool for several minutes.
- Pour the dressing over the fruit mixture.
- Toss gently and serve immediately or chilled.
Notes
- Serve with cinnamon pita chips or tortilla chips.
- Use as a topping for grilled chicken, fish, or shrimp.
- Add blueberries, kiwi, or mango for variety.
- Best enjoyed within two days.
