Description

Small batch Strawberry Preserves using only three ingredients with bright strawberry flavor and light sweetness.


Ingredients

Scale
  • 4 cups strawberries, washed and roughly chopped
  • 1 cup sugar
  • 1/4 cup freshly squeezed lemon juice

Instructions

  1. Wash and roughly chop the strawberries.
  2. Place the strawberries into a deep saucepan.
  3. Pour the sugar over the strawberries and add the lemon juice.
  4. Stir gently and let the mixture rest for 5 minutes.
  5. Place the saucepan over medium-low heat and bring to a gentle simmer.
  6. Cook for 60 to 90 minutes while stirring occasionally.
  7. Break larger strawberry pieces with a spoon if desired.
  8. Continue simmering until the preserves become thick and glossy.
  9. Test the consistency on a chilled plate before removing from heat.
  10. Cool completely before storing in jars or containers.

Notes

  1. One serving equals two tablespoons.
  2. Store refrigerated for up to 3 weeks.
  3. Freeze for up to 3 months in freezer-safe containers.
