Description

Strawberry Shortcake Cheesecake Rolls are a sweet and creamy dessert that combines soft cinnamon roll-style dough, a luscious strawberry cheesecake filling, and a crunchy golden shortcake crumb topping. A fun twist on classic strawberry shortcake, these rolls are perfect for brunch, dessert, or special occasions.

Ingredients

Scale

For the Dough:

  • 1 can (13.8 oz) refrigerated crescent roll dough or pizza dough (or homemade sweet roll dough)

  • Flour (for dusting surface)

For the Cheesecake Filling:

  • 8 oz cream cheese, softened

  • 1/4 cup powdered sugar

  • 1/2 teaspoon vanilla extract

For the Strawberry Layer:

  • 1 cup fresh strawberries, diced (or frozen, thawed and drained)

  • 2 tablespoons granulated sugar

  • 1 teaspoon lemon juice

For the Shortcake Crumble Topping:

  • 1/2 cup Golden Oreos or shortbread cookies, crushed

  • 2 tablespoons unsalted butter, melted

  • 1 tablespoon strawberry gelatin powder (optional for color and flavor)

For the Glaze (optional):

  • 1/2 cup powdered sugar

  • 1–2 tablespoons milk

  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking dish or sheet with parchment paper.

  2. Prepare the filling: In a bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.

  3. Make strawberry mix: Combine strawberries, granulated sugar, and lemon juice in a bowl. Let sit for 10 minutes to macerate.

  4. Roll out the dough on a floured surface into a rectangle (about 9×13 inches).

  5. Spread cheesecake filling evenly over the dough, then spoon the strawberry mixture over it.

  6. Roll the dough tightly from one long end to the other. Slice into 8–10 rolls and place them in the prepared baking dish.

  7. Make crumble topping: Mix crushed cookies, melted butter, and strawberry gelatin powder until crumbly.

  8. Sprinkle crumble generously over the top of each roll.

  9. Bake for 20–25 minutes, or until golden brown and cooked through.

  10. Optional glaze: Mix powdered sugar, milk, and vanilla extract until smooth. Drizzle over cooled rolls.

  11. Serve warm or chilled, and enjoy!

Notes

  • Use store-bought crescent dough for a quick version or homemade dough for a bakery-style finish.

  • You can swap fresh strawberries with jam or preserves for convenience.

  • The shortcake crumble is key for that nostalgic strawberry crunch—don’t skip it!

  • Best served fresh, but can be stored in the fridge for up to 3 days.
