  • 2 tbsp sugar
  • 1/2 tsp salt
  • 1/2 cup butter
  • 3/4 cup milk

Cheesecake Filling:

  • 8 oz cream cheese
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream

Strawberry Compote:

  • 2 cups fresh strawberries
  • 1/4 cup sugar
  • 1 tbsp lemon juice

For Assembly:

  • 1 sushi mat
  • Parchment paper
  • Optional: mint leaves, powdered sugar for garnish

Instructions

  • Prepare the Shortcake:
    • Preheat oven to 425°F (220°C).
    • Mix flour, baking powder, sugar, and salt in a bowl.
    • Add butter and mix until crumbly. Gradually stir in milk to form dough.
    • Roll out on a floured surface and cut into squares. Bake for 12-15 minutes or until golden brown. Cool completely.
  • Make the Cheesecake Filling:
    • Beat cream cheese and sugar until smooth.
    • Add vanilla and heavy cream; whip until fluffy. Chill in the fridge.
  • Prepare Strawberry Compote:
    • Heat strawberries, sugar, and lemon juice in a pot over medium heat.
    • Cook until soft and syrupy, about 10 minutes. Cool to room temperature.
  • Assemble the Sushi Rolls:
    • Lay parchment paper on a sushi mat. Place a shortcake square on the mat.
    • Spread cheesecake filling, followed by strawberry compote.
    • Roll tightly using the sushi mat, ensuring a firm roll. Repeat with remaining ingredients.
  • Chill and Slice:
    • Refrigerate rolls for 30 minutes.
    • Slice into bite-sized pieces, garnish with mint leaves or powdered sugar, and serve!
