Instructions

  • Prepare the rice: Rinse sushi rice under cold water until the water runs clear. Cook according to package instructions. While warm, mix with vinegar, sugar, and salt. Let cool completely.
  • Prepare the filling: In a bowl, combine cream cheese or mascarpone with vanilla extract. Adjust sweetness if needed by adding sugar or honey.
  • Assemble the roll: Lay a sheet of nori (if using) shiny side down on a bamboo mat or parchment paper. Spread a thin, even layer of rice over the nori, leaving an inch at the top edge for sealing.
  • Add the filling: Place sliced strawberries in a horizontal line near the center. Spread or pipe the cream cheese mixture on top of the strawberries.
  • Roll the sushi: Carefully lift the bamboo mat or parchment and roll tightly, pressing gently to secure the roll. Seal with a dab of water if needed.
  • Slice the roll: Use a sharp knife to cut the roll into bite-sized pieces, wiping the blade clean between cuts for neat slices.
