Description

Fresh Strawberry Spinach Salad made with baby spinach, strawberries, blueberries, feta cheese, toasted pecans, and homemade balsamic glaze.


Ingredients

  • 1 cup balsamic vinegar
  • 1/4 cup honey or brown sugar
  • 10 oz baby spinach
  • 3 cups strawberries, sliced
  • 1 cup blueberries
  • 1/3 cup feta cheese, crumbled
  • 1 cup toasted pecans

Instructions

  1. Combine balsamic vinegar and honey in a saucepan.
  2. Bring to a gentle boil and simmer until reduced by half.
  3. Cool the balsamic glaze.
  4. Add spinach, strawberries, blueberries, and feta to a bowl.
  5. Toss gently to combine.
  6. Divide into serving bowls.
  7. Top with toasted pecans.
  8. Drizzle with balsamic glaze and serve.

Notes

  1. Dry spinach thoroughly before assembling.
  2. Do not overcook the balsamic glaze.
