Description

Creamy baked strawberry swirl cheesecake with a rich cream cheese filling and buttery graham cracker crust.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup melted butter
  • 1/4 cup sugar
  • 32 oz cream cheese, softened
  • 1 1/4 cups sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1 cup fresh strawberries, hulled and diced
  • 2 tablespoons sugar
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 325°F and grease a 9-inch springform pan
  2. Mix graham cracker crumbs, melted butter, and sugar and press into pan
  3. Beat cream cheese until smooth, then mix in sugar and vanilla
  4. Add eggs one at a time, mixing gently
  5. Fold in sour cream until smooth
  6. Pour filling over crust
  7. Blend strawberries, sugar, and lemon juice until smooth
  8. Drop strawberry puree over batter and swirl gently with a knife
  9. Bake for 55–60 minutes until center is set
  10. Cool completely, then refrigerate at least 4 hours before serving
