Description

Slow Cooker Street Corn Chicken: Creamy, zesty, and effortless comfort food that transforms Mexican street corn flavors into a slow-cooked masterpiece.


Ingredients

23 boneless chicken breasts

2 cups corn (frozen or fresh)

4 oz cream cheese, cubed

1/3 cup cotija cheese

Juice of 1 lime

2 garlic cloves, minced

1/2 tsp chili powder

Optional: smoked paprika, cilantro, onion powder


Instructions

1. Place chicken in the crockpot first.

2. Add corn, cream cheese, cotija, lime juice, garlic, and chili powder on top.

3. Do not stir. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours.

4. Shred chicken directly in the pot and stir to mix.

5. Adjust consistency with broth or milk if needed.

6. Serve in tacos, rice bowls, or salads.

Notes

To make it dairy-free, use vegan cream cheese.

Add jalapeños or chipotle for spice.

Freezes well for up to 3 months.
