Ingredients
5 mild banana peppers, halved lengthwise and seeded
1/2 lb chorizo sausage (casings removed)
8 oz goat cheese (soft)
1/4 cup chopped fresh basil
2 tbsp chopped fresh chives
Italian-seasoned panko breadcrumbs (for sprinkling)
Paprika (for sprinkling)
Cooking spray
Instructions
Preheat broiler on high.
In a skillet over medium heat, cook chorizo until browned and crumbly. Let cool slightly.
In a bowl, mix cooked chorizo, goat cheese, basil, and chives until well combined.
Stuff each banana pepper half with the filling.
Place peppers on a baking sheet. Sprinkle with breadcrumbs and paprika.
Lightly mist with cooking spray.
Broil for 3–4 minutes until golden and crisp.
Let cool slightly before serving.
