Description

Instructions

  • Prepare the Crust: In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press firmly into the bottom of a 9-inch springform pan. Chill in the refrigerator while preparing the filling.
  • Make the Filling: Beat cream cheese and sugar until smooth. Add vanilla extract, sour cream, and lemon juice, mixing until combined. In a separate bowl, whip heavy cream until stiff peaks form, then fold into the cream cheese mixture.
  • Assemble & Chill: Pour the cheesecake filling over the crust, smoothing the top. Refrigerate for at least 4 hours or overnight.
  • Prepare the Topping: In a bowl, toss peach slices and berries with honey, lemon zest, and cinnamon. Let sit for 10 minutes.
  • Finish & Serve: Remove cheesecake from the springform pan, top with fruit mixture, and serve chilled.
