Description

Summer Berry Jello Lasagna is an easy no-bake dessert with creamy cheesecake filling, fresh berries, colorful gelatin layers, and a buttery Golden Oreo crust.


Ingredients

  • 36 Golden Oreo cookies
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons red sprinkles
  • 2 tablespoons white sprinkles
  • 2 tablespoons blue sprinkles
  • 6 ounces berry blue gelatin
  • 2/3 cup boiling water
  • 1/2 cup Greek yogurt
  • 1 1/2 cups fresh blueberries
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 3 3/4 cups whipped cream
  • 6 ounces strawberry Jello
  • 1 1/4 cups boiling water
  • 3/4 cup iced water
  • 4 cups sliced strawberries

Instructions

  1. Pulse Golden Oreo cookies into fine crumbs and mix with sprinkles and melted butter.
  2. Press the crust into a 9×13-inch baking dish and freeze until firm.
  3. Dissolve berry blue gelatin in boiling water and let cool slightly.
  4. Beat cream cheese, powdered sugar, and vanilla until smooth, then fold in whipped cream.
  5. Blend blueberries and Greek yogurt, then whisk into the gelatin mixture.
  6. Combine the berry mixture with the cream cheese mixture and spread over the chilled crust.
  7. Refrigerate until slightly firm.
  8. Dissolve strawberry gelatin in boiling water, then stir in iced water and cool completely.
  9. Arrange sliced strawberries over the blueberry layer.
  10. Pour cooled strawberry gelatin over the strawberries.
  11. Refrigerate for at least 4 to 6 hours or overnight until set.
  12. Top with whipped cream and garnish with sprinkles or fresh berries before serving.

Notes

  1. Allow the gelatin mixture to cool completely before pouring over the cheesecake layer.
  2. Chill overnight for cleaner slices and better texture.
  3. Fresh berries provide the best flavor and texture for this dessert.
