Description

This refreshing Summer Peach Mousse Trifle features layers of creamy fresh peach mousse, tender vanilla cake, maple-sweetened whipped cream, and juicy peach slices. Serve it in four individual glasses or assemble one large trifle for a summer gathering.

  • 1 small vanilla cake or gluten-free yellow vanilla cake, baked and cooled
  • 4 fresh ripe peaches
  • 1 tablespoon plus 2 teaspoons lemon juice
  • 2 tablespoons cold water
  • 1 tablespoon plus 2 teaspoons unflavored gelatin powder
  • 4 tablespoons pure maple syrup, divided
  • 1 cup heavy whipping cream

Instructions

  1. Prepare the vanilla cake according to the recipe instructions. Cool the cake completely before assembling the trifles.
  2. Cut the cooled cake into rounds that fit the serving glasses, or cut it into small cubes.
  3. Peel and chop three peaches. Add them to a blender with the lemon juice and 3 tablespoons maple syrup.
  4. Blend the peaches until the puree looks smooth, light, and airy.
  5. Slice or dice the fourth peach. Toss the pieces with a small amount of lemon juice and refrigerate them until assembly.
  6. Pour the cold water into a small microwave-safe bowl. Sprinkle the gelatin evenly over the water and let it bloom for 5 minutes.
  7. Microwave the bloomed gelatin for 5 to 10 seconds, just until it becomes liquid. Do not boil it.
  8. Pour the melted gelatin into the peach puree and blend for 30 to 45 seconds.
  9. Cover and refrigerate the peach puree for about 1 hour, or until it begins to thicken.
  10. Beat the heavy whipping cream with a hand mixer until stiff peaks form.
  11. Divide the whipped cream equally between two bowls.
  12. Gently fold the thickened peach puree into one bowl of whipped cream until no streaks remain.
  13. Fold the remaining 1 tablespoon maple syrup into the second bowl of whipped cream.
  14. Alternate layers of peach mousse, vanilla cake, sweetened whipped cream, and fresh peach pieces in four serving glasses.
  15. Cover and refrigerate the assembled trifles for at least 3 hours before serving.

Notes

  1. Use ripe, fragrant fresh peaches for the strongest flavor and best presentation.
  2. Thawed frozen peaches may replace fresh peaches in the puree. Drain them thoroughly before blending.
  3. Honey or another preferred sweetener may replace the maple syrup.
  4. Store-bought vanilla cake may replace homemade cake.
  5. Whipped coconut cream may replace heavy whipping cream for a dairy-free variation.
  6. Cover leftovers and refrigerate them for up to 3 days.
  7. Do not freeze the assembled trifles because the mousse and whipped cream may separate after thawing.
