Description
This Southern classic combines rich, nutty pecans with a moist, sweet batter for the perfect baked treat. Ideal for breakfast, dessert, or an afternoon snack, every slice is pure comfort!
Ingredients
- 1 cup granulated sugar
- 1 cup brown sugar
- 1 cup vegetable oil
- 4 large eggs
- 2 cups self-rising flour
- 1 tsp vanilla extract
- 2 cups chopped pecans
- 1/2 cup shredded coconut
- 1/2 cup chocolate chips
- 1/2 tsp cinnamon
Instructions
1️⃣ Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
2️⃣ In a large mixing bowl, combine granulated sugar, brown sugar, and vegetable oil until smooth.
3️⃣ Add eggs one at a time, mixing thoroughly after each addition.
4️⃣ Gradually add self-rising flour and vanilla extract. Mix until fully incorporated.
5️⃣ Fold in the chopped pecans (and any optional ingredients you desire).
6️⃣ Pour the batter into the prepared baking dish, spreading it evenly.
7️⃣ Bake for 30–35 minutes or until a toothpick inserted into the center comes out clean.
8️⃣ Allow the bread to cool before slicing and serving.
Notes
1️⃣ Don’t Overmix the Batter: Overmixing can make the bread dense and tough. Stir just until the ingredients are combined for a light, tender texture.
2️⃣ Use Fresh Pecans: Fresh, high-quality pecans make a huge difference in flavor. Avoid stale or old nuts for the best results.
3️⃣ Check for Doneness: Ovens vary, so use a toothpick to test. If it comes out clean, your bread is ready. Overbaking can dry it out, so keep a close eye near the end.
