- 1 cup pineapple, cubed

- 1 cup jasmine rice
- 2 cups chicken broth
- 1 tablespoon soy sauce
- 1 teaspoon ginger, grated

- 1/4 cup green onions, sliced
- 1 tablespoon sesame seeds
Instructions
- Heat olive oil in a large skillet over medium heat and add the cubed chicken. Cook until golden brown and fully cooked through, then remove the chicken from the skillet and set it aside.
- In the same skillet, add the chopped onion, minced garlic, and diced red bell pepper. Sauté until the vegetables soften and become fragrant.
- Add the cubed pineapple to the skillet and cook for about 2 minutes, stirring gently so the pineapple warms and releases its juices.
- Stir in the jasmine rice, chicken broth, soy sauce, grated ginger, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low, cover the skillet, and let it simmer for 18–20 minutes, or until the rice is fully cooked and the liquid is absorbed.
- Once the rice is done, return the cooked chicken to the skillet and gently mix to combine, allowing the flavors to blend and the chicken to heat through.
- Serve the pineapple chicken and rice hot, garnished with sliced green onions and sesame seeds.
