For the Muffins:
- 1 cup cornmeal

For the Hot Honey Glaze:
- 1/4 cup butter
- 1/2 cup honey
- 1/2 teaspoon red pepper flakes (adjust to taste)
- 1 tablespoon apple cider vinegar
Instructions
1️⃣ Prepare the Muffins:
- Preheat oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, mix eggs, milk, and melted butter.
- Combine the wet and dry ingredients, stirring gently until just combined (do not overmix).
- Fill muffin cups 2/3 full and bake for 15-20 minutes, or until a toothpick inserted in the center comes out clean.
2️⃣ Prepare the Hot Honey Glaze:
- In a small saucepan over medium heat, melt the butter.
- Add honey, red pepper flakes, and apple cider vinegar. Stir and let it simmer for 2-3 minutes, allowing the flavors to blend.
- Remove from heat and let it cool slightly.
3️⃣ Glaze the Muffins:
- While the muffins are still warm, drizzle the hot honey glaze generously over the top.
