- 2 peaches, sliced or diced

- 1–2 large avocados, diced
- 3 tablespoons lime juice
- 3 teaspoons honey
- Salt, to taste
- Black pepper, to taste
Instructions
- Cook the corn using your preferred method until tender, then let it cool completely.
- Cut the kernels off the cob and place them in a large mixing bowl.
- Slice or dice the peaches and chop the red onion, cilantro, and jalapeño.
- Whisk together the lime juice and honey until smooth, then season with black pepper.
- Add the peaches, onion, cilantro, and jalapeño to the corn.
- Pour the vinaigrette over the salad and gently toss until evenly coated.
- Season with salt and additional black pepper to taste.
- Cover and refrigerate the salad for 10 to 20 minutes.
- Fold in the diced avocado right before serving or add it to each individual bowl.
- Serve chilled and enjoy.
