Description

This Strawberry Cucumber Salad is a refreshing, vibrant summer side dish combining sweet strawberries, crisp cucumbers, and juicy blueberries, all tossed in a tangy-sweet vinegar honey dressing. Perfect for barbecues, brunches, or light lunches, it’s hydrating, colorful, and bursting with seasonal flavor.

Ingredients

Scale
  • 450 g (1 lb) fresh strawberries, sliced (approx. 3 cups)

  • 1 large English cucumber, sliced (approx. 2 cups or 300 g)

  • 150 g (1 cup) blueberries

  • 45 ml (3 tablespoons) white wine vinegar (or red wine or white balsamic vinegar)

  • 45 ml (3 tablespoons) honey

  • 2.5 g (1/2 teaspoon) sea salt

  • 1 g (1/2 teaspoon) freshly ground pepper

  • Fresh mint leaves for garnish (optional)

Instructions

  • Rinse and slice strawberries and cucumber. Combine with blueberries in a medium bowl.

  • In a small bowl, whisk vinegar, honey, salt, and pepper until smooth.

  • Drizzle dressing over the salad ingredients.

  • Gently toss to coat without bruising the fruit.

  • Garnish with mint and extra strawberries if desired.

  • Serve immediately for best texture and freshness.

Notes

Best served within 10 minutes of dressing to preserve crispness.

Use chilled ingredients for maximum refreshment.

Swap white wine vinegar for white balsamic for a sweeter twist.

Add feta, nuts, or grilled protein to make it a main dish.

Store dressing separately if prepping ahead.
