This Sweet Potato Turkey Chili combines lean ground turkey, tender sweet potatoes, tomatoes, corn, and smoky spices in a thick, hearty broth. It cooks in one pot in only 30 minutes and makes four satisfying servings.

- 1 large sweet potato, peeled and cut into 1-inch cubes

Instructions
- Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, then sauté for 1 to 2 minutes until fragrant.
- Add the ground turkey. Break it into small crumbles, season lightly with salt and black pepper, and cook until no pink remains.
- Stir in the diced tomatoes, tomato sauce, chicken broth, cubed sweet potato, chili powder, smoked paprika, cumin, and sugar.
- Bring the chili to a boil. Reduce the heat to medium and simmer for about 15 minutes, stirring occasionally, until the sweet potato becomes fork-tender.
- Add the frozen corn. Raise the heat to medium-high and cook for several minutes until the chili returns to a boil.
- Taste and add salt or black pepper as needed. Remove the pot from the heat and serve with cilantro, cheddar cheese, and sliced avocado.
Notes
- Cut the sweet potato into evenly sized 1-inch cubes so every piece cooks at the same rate.
- Use low-sodium chicken broth and tomatoes when you want more control over the salt level.
- For thicker chili, simmer it uncovered for several extra minutes or mash a few sweet potato cubes into the broth.
