Description
Candied Jalapeños, also known as Cowboy Candy, are sweet, spicy, and irresistibly tangy. Made by simmering jalapeño slices in a seasoned syrup, they’re a bold condiment perfect for burgers, cheese boards, and more. The leftover syrup is a secret weapon for marinades and cocktails!
Ingredients
450g (1 lb) fresh jalapeños, sliced into uniform rings
200g (1 cup) sugar
240ml (1 cup) white vinegar
½ tsp garlic powder
¼ tsp turmeric
¼ tsp ground celery seed
½ tsp chilli flakes (optional)
Instructions
Wash and slice jalapeños into even rings, removing stems. Keep seeds for heat.
In a saucepan, combine sugar, vinegar, garlic powder, turmeric, celery seed, and chili flakes. Bring to a boil, stirring until sugar dissolves.
Simmer syrup for 5 minutes.
Add sliced jalapeños and simmer for another 5 minutes until slightly softened.
Using a slotted spoon, transfer jalapeños to sterilized jars.
Carefully pour hot syrup over the jalapeños until fully submerged.
Seal jars and let cool to room temperature. Refrigerate for at least 24 hours before serving.
Notes
Use gloves when slicing to avoid skin irritation.
Let the jars sit for a few days in the fridge to deepen flavor.
For more heat, mix in serrano or red jalapeños.
Turmeric adds a beautiful color but can be omitted.
Save leftover syrup for salad dressings, marinades, or cocktails.
