Description
Swiss Mushroom Melt is a cozy, crave-worthy grilled sandwich featuring gooey Swiss cheese, savory sautéed mushrooms, and golden, buttery bread. Ready in 25 minutes, this vegetarian-friendly melt delivers big comfort with simple pantry ingredients—perfect for a quick lunch or indulgent snack.
Ingredients
2 tbsp butter, plus extra for bread
1 tbsp olive oil
1 shallot, finely chopped
2 cups mushrooms, sliced (Portobello, Cremini, or Shiitake)
1 tsp thyme (fresh or dried)
1 tbsp balsamic vinegar (optional)
Salt and pepper, to taste
4 slices Swiss cheese (or Gruyère)
8 slices bread (Rye, Sourdough, or Artisan)
Instructions
Heat a dry skillet over medium. Sauté mushrooms for 5–7 minutes until moisture evaporates and flavor deepens.
Add butter, olive oil, and chopped shallot. Cook another 5 minutes until golden.
Stir in thyme, balsamic vinegar (if using), salt, and pepper. Mix well and set aside.
Butter one side of each bread slice. On the unbuttered side of 4 slices, layer Swiss cheese and mushroom mixture. Top with remaining bread slices, buttered side out.
Heat a clean skillet or griddle over medium. Grill sandwiches for 3–4 minutes per side, until cheese melts and bread turns golden.
Slice in half and serve warm.
Notes
Take time with the dry sauté for rich mushroom flavor.
Rye or sourdough adds the best structure and texture.
Swap in Gruyère or provolone for a twist on flavor.
Add roast beef or turkey for a heartier sandwich.
Serve with tomato soup or a green salad for a complete meal.
