Description

Ingredients

  • 1 packet taco seasoning
  • 1 cup cooked Mexican rice
  • ½ cup nacho cheese sauce
  • ½ cup Fiesta strips
  • ¾ cup three-cheese blend (cheddar, mozzarella, jack)
  • ½ cup reduced-fat sour cream
  • 4 large flour tortillas

Instructions

  • Prepare the Beef: Cook ground beef in a skillet over medium heat until browned. Add taco seasoning and ⅓ cup water. Stir and simmer for 5 minutes.
  • Warm the Rice: Heat Mexican rice in a saucepan or microwave until warm.
  • Assemble the Burrito: Warm tortillas in a skillet or microwave to make them pliable. Lay each tortilla flat and layer in the center:
    • A scoop of seasoned beef
    • A spoonful of rice
    • Drizzle nacho cheese sauce
    • Sprinkle the three-cheese blend
    • Add a few Fiesta strips
    • Top with a dollop of sour cream
  • Roll It Up: Fold in the sides of the tortilla, then roll it tightly from bottom to top to form the burrito.
  • Optional Toasting: Heat a skillet over medium heat. Place the burrito seam-side down and toast for 2 minutes on each side for extra crispiness.
