Creamy, crunchy, and tangy taco coleslaw made with cabbage, corn, beans, lime, and taco seasoning. Perfect taco topping or BBQ side dish.

- ¾ cup mayonnaise
- ½ cup sour cream
- 2 tablespoons taco seasoning
- 2 tablespoons fresh lime juice
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 20 ounces pre-shredded coleslaw mix
- 1 cup diced red bell pepper
- 1 (15.25 ounce) can black beans drained and rinsed
- 1 (14.75 ounce) can fire-roasted corn drained
- 3 tablespoons minced fresh jalapeno pepper
- ⅓ cup chopped fresh cilantro
- Extra chopped cilantro for garnish
Instructions
- Whisk together mayonnaise, sour cream, taco seasoning, lime juice, salt, and black pepper in a small bowl until smooth.
- Place coleslaw mix, diced red bell pepper, black beans, corn, jalapeno, and cilantro in a large bowl.
- Pour the dressing over the vegetables and stir until everything is evenly coated.
- Cover the bowl and refrigerate for 30 minutes to allow the flavors to blend.
- Transfer to a serving bowl and garnish with additional chopped cilantro before serving.
Notes
- Drain corn well to prevent watery coleslaw.
- For more heat add extra jalapeno or chopped chipotle pepper.
- Chill for at least 30 minutes so the flavors blend well.
- For best texture store dressing and vegetables separately until serving if making ahead.
