Ingredients
- 1 lb ground beef (or turkey, chicken, or plant-based alternative)
- 2 cups small pasta (elbow, penne, or small shells)
- 1 medium onion, diced
- 1 bell pepper, diced
- 1 can (14 oz) diced tomatoes
- 4 cups beef or chicken broth
- 1 packet taco seasoning (or homemade seasoning blend)
- 1 tsp garlic powder
- 1 tsp cumin
- 1 tsp chili powder
- 1 can (15 oz) black beans, rinsed and drained (optional)
- 1 cup frozen corn (optional)
- Salt and pepper to taste
- Toppings: shredded cheese, sour cream, cilantro, sliced jalapeños
Instructions
- In a large pot, heat over medium and brown the ground beef until fully cooked. Drain any excess fat.
- Add diced onion and bell pepper to the pot. Sauté until softened and fragrant, about 5 minutes.
- Stir in taco seasoning, garlic powder, cumin, and chili powder. Mix well to coat the meat and veggies.
- Pour in broth and diced tomatoes (along with optional black beans and corn). Stir to combine.
- Bring the mixture to a simmer, then add the pasta. Cook for 10–12 minutes or until the pasta is tender.
- Taste the soup and adjust the seasoning as needed with salt, pepper, or additional taco seasoning.
- Serve hot, garnished with your favorite toppings like shredded cheese, sour cream, and fresh cilantro.
