- ½ cup guacamole

Instructions
- Prepare the Potatoes: Preheat your oven to 400°F (200°C). Wash and scrub potatoes, then pierce them with a fork. Bake directly on the rack for 45–60 minutes, until soft and fluffy inside.
- Cook the Filling: While the potatoes bake, brown the ground beef in a skillet over medium heat. Drain excess fat and stir in taco seasoning with ½ cup water. Simmer until the mixture thickens.
- Assemble: Slice each potato open and fluff the interior with a fork. Spoon taco-seasoned beef over the potatoes. Top with cheese, lettuce, sour cream, salsa, and guacamole. Add any additional toppings you like.
