Ingredients
1 cup (190 g) white rice, uncooked
1 tbsp (15 ml) olive oil
⅓ cup (50 g) onion, chopped
1 small jalapeño, sliced (optional)
3 garlic cloves, chopped
1 lb (450 g) lean ground beef
1 can (425 g / 15 oz) black beans, drained
1 tbsp (16 g) tomato paste
½ tsp (2.5 g) salt
1 tsp (2 g) chili powder
½ tsp (1 g) paprika
½ tsp (1 g) dried oregano
¼ cup (60 g) chipotle peppers in adobo sauce
4 tbsp (60 ml) water
3 tbsp (5 g) fresh cilantro (for guac & garnish)
1 avocado
⅓ cup (80 g) salsa
⅓ cup (40 g) shredded cheese
Instructions
Cook the Rice: Prepare the rice according to package directions (about 20 minutes). Fluff and set aside.
Brown the Beef: Heat olive oil in a skillet over medium-high heat. Add ground beef and cook 5–8 minutes until browned.
Add Seasonings: Stir in onion, jalapeño, garlic, tomato paste, salt, chili powder, paprika, and oregano. Cook 2 minutes until fragrant.
Make the Chipotle Sauce: Blend chipotle peppers with water until smooth. Pour into the skillet with beef and stir in black beans. Simmer for 2 minutes.
Prepare the Guacamole: In a small bowl, mash the avocado with 1 tbsp cilantro and a pinch of salt.
Assemble: Layer rice in bowls, top with chipotle beef mixture, guacamole, salsa, cheese, and fresh cilantro. Serve warm and enjoy!
