Ingredients
- 4 large Russet potatoes
- 1 lb ground beef (or turkey/chicken/veggie alternative)
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- ½ cup salsa
- ¼ cup diced green onions
- ¼ cup diced tomatoes
- ¼ cup sliced jalapeños
- 1 tbsp olive oil

Instructions

3️⃣ Assemble the Potatoes: Slice open each baked potato and fluff the insides with a fork. Spoon in the seasoned taco meat, top with shredded cheese, and return to the oven for 5 minutes until the cheese melts.
4️⃣ Add Toppings: Top each potato with salsa, sour cream, diced tomatoes, green onions, and jalapeños.
