Description

This easy Taco Stuffed Peppers recipe is perfect for a quick dinner! Healthy, hearty, and loaded with taco flavor.


Ingredients

1 tablespoon olive oil

½ cup diced onion

1 tablespoon minced garlic

1 lb ground turkey or ground beef

4 large bell peppers halved, red orange or yellow

1 cup canned tomato sauce

1 tablespoon taco seasoning

1 cup black beans

1 cup frozen corn

1 cup cooked white rice or brown rice

1 cup shredded cheddar cheese


Instructions

1. Preheat the oven to 350 degrees and prepare a greased 9×13 oven-safe baking dish.

2. In a sauté pan on the stove, heat olive oil on medium high heat for 3 minutes.

3. Cook onions, garlic, and ground turkey in olive oil for 10 minutes or until the turkey is browned.

4. Slice peppers lengthwise, remove seeds, and place in baking dish.

5. Stir tomato sauce, spices, black beans, corn, and cooked rice into turkey mixture.

6. Stuff peppers with filling and top with cheddar cheese.

7. Bake 15–20 minutes until cheese melts and peppers soften.

Notes

Use ground beef or turkey.

Swap rice with quinoa for variation.

Add jalapeños for extra heat.
