Description

Taco Stuffed Potatoes are fluffy baked potatoes loaded with seasoned ground beef, cheese, and classic taco toppings for a filling meal.

Ingredients

Scale
  • 4 to 6 medium russet potatoes
  • 1 pound lean ground beef
  • 1 packet taco seasoning
  • Shredded lettuce
  • Shredded cheddar cheese
  • Sour cream
  • Salsa
  • Guacamole
  • Green onions

Instructions

  1. Preheat oven to 400°F and prepare potatoes by washing, drying, poking holes, and wrapping in foil.
  2. Bake potatoes for about 1 hour until tender.
  3. Brown ground beef in a skillet over medium-high heat and drain excess grease.
  4. Add taco seasoning and water, then simmer for 10 minutes.
  5. Slice open baked potatoes, fluff the inside, fill with beef, and add toppings.

Notes
