Description

Tacoritos combine seasoned ground beef, pork sausage, refried beans, and Monterey Jack cheese wrapped in flour tortillas and baked with a rich homemade chili sauce for a hearty Mexican-style dinner.


Ingredients

  • 1/4 cup butter, cubed

  • 1/4 cup all-purpose flour

  • 4 cups water

  • 3 tablespoons chili powder

  • 1 teaspoon garlic salt

  • 1 pound ground beef

  • 1 pound bulk pork sausage

  • 1/4 cup chopped onion

  • 1 cup refried beans

  • 8 flour tortillas (8 inches), warmed

  • 3 cups shredded Monterey Jack cheese

  • Shredded lettuce (optional)

  • Chopped tomatoes (optional)

  • Sliced ripe olives (optional)

  • Sour cream (optional)


Instructions

  1. Melt butter in a large saucepan over medium heat.

  2. Stir in flour until smooth.

  3. Gradually add water while whisking to prevent lumps.

  4. Bring mixture to a boil and cook for 1 minute until thickened.

  5. Stir in chili powder and garlic salt, then simmer uncovered for 10 minutes.

  6. In a large skillet, cook ground beef, pork sausage, and onion until meat is browned and no longer pink.

  7. Drain excess fat.

  8. Stir in refried beans and heat through.

  9. Spread 1/4 cup sauce in a greased 13×9-inch baking dish.

  10. Spread 1 tablespoon sauce over each tortilla.

  11. Place about 2/3 cup meat mixture down the center of each tortilla.

  12. Top each with 1/4 cup shredded Monterey Jack cheese.

  13. Roll tortillas and place seam side down in the baking dish.

  14. Pour remaining sauce over the top and sprinkle with remaining cheese.

  15. Bake uncovered at 350°F for 18–22 minutes until bubbly and cheese is melted.

  16. Serve with optional toppings if desired.

Notes

Warm tortillas before filling to prevent cracking.

Avoid overfilling tortillas to keep them from splitting during baking.

Assemble the dish ahead of time and refrigerate before baking if needed.

Add fresh toppings just before serving for extra texture and flavor.
