- 1 medium onion, chopped
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) diced tomatoes with green chilies
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cornmeal
- 1 cup milk
- 1 large egg
- 1 cup shredded cheddar cheese
- 1/2 cup sliced black olives (optional)
- 1/4 cup chopped fresh cilantro (for garnish)
Instructions
- Preheat oven to 350°F.
- Cook ground beef and onion in a skillet over medium heat for 5–7 minutes until browned; drain excess fat.
- Stir in black beans, diced tomatoes with green chilies, chili powder, cumin, garlic powder, salt, and pepper; simmer 5 minutes.
- In a bowl, mix cornmeal, milk, and egg until smooth.
- Grease a 9×13-inch baking dish and spread half the cornmeal mixture evenly.
- Layer beef mixture over cornmeal base.
- Pour remaining cornmeal mixture on top.
- Sprinkle cheddar cheese and black olives over surface.
- Bake 30–35 minutes until golden brown and set.
- Cool 10 minutes, garnish with cilantro, and slice before serving.
Notes
- Substitute ground beef with sautéed bell peppers, mushrooms, and zucchini for a vegetarian version.
- Add sliced jalapeños for extra heat.
- Serve with sour cream for added creaminess.
