Description

This Tater Tot Breakfast Casserole is an easy, hearty, family favorite made with sausage, peppers, eggs, cheese, and crispy Tater Tots baked into a creamy, cheesy dish.


Ingredients

Scale

1 32-ounce bag frozen Tater Tots (divided, do NOT thaw)

1 pound hot bulk pork sausage

1 medium onion, diced

1 red bell pepper, chopped

1 green bell pepper, chopped

3 cloves garlic, minced

1 ½ cups freshly grated sharp cheddar cheese

1 ½ cups freshly grated pepper Jack cheese

EGG MIXTURE:

8 large eggs

2 cups half-and-half

4 ounces diced green chilies

1 teaspoon dried parsley

1/2 teaspoon paprika

1/2 teaspoon ground mustard

1/2 teaspoon dried oregano

1/2 teaspoon salt

1/2 teaspoon pepper


Instructions

1. Preheat oven to 350°F and grease a 9×13 baking dish.

2. Cook sausage with onions and peppers until browned; add garlic for 30 seconds. Drain and transfer to dish.

3. Whisk all Egg Mixture ingredients in a bowl.

4. Add half the Tater Tots® and half of each cheese to the dish; stir and spread evenly.

5. Pour Egg Mixture over the top and add remaining Tater Tots®.

6. Bake 70–80 minutes until set. Add remaining cheese and bake 5–10 minutes.

7. Rest before slicing; garnish with chives if desired.

Notes

Swap pork sausage with turkey sausage and add 1/8–1/4 teaspoon cayenne if desired.

Use any melty cheese such as mozzarella, Gruyere, Swiss, or Colby Jack.

Store leftovers up to 5 days in the refrigerator.

Microwave slices for 1 minute or bake the full pan at 325°F for 20 minutes.

For overnight prep, assemble without the top layer of tots; add them just before baking.
