Ingredients

Scale
  • 2 tablespoons olive oil (30 ml)

  • 2 medium yellow onions, chopped (2 cups)

  • 1 pound ground chuck beef (450 g, 80% lean)

  • 1/2 teaspoon garlic powder (1 g)

  • 1/2 teaspoon onion powder (1 g)

  • 1/2 teaspoon black pepper (1 g)

  • 2 cans condensed cream of mushroom soup (2 x 10.5 oz / 298 g each)

  • 2 cups thawed frozen green beans (280 g)

  • 2 cups thawed frozen sweet corn (280 g)

  • 1 1/2 pounds frozen tater tots (680 g)

  • 1/4 teaspoon seasoned salt (1 g)

  • 1/2 cup shredded sharp Cheddar cheese (60 g)

  • 2 small scallions, thinly sliced

Instructions

  • Preheat oven to 400°F (200°C).

  • Heat olive oil in an oven-safe skillet over medium-high. Add onions and beef; cook 5–6 minutes until browned.

  • Reduce heat, stir in garlic powder, onion powder, and pepper. Cook 1 minute more.

  • Stir in mushroom soup, green beans, and corn. Mix well.

  • Toss tater tots with seasoned salt in a bowl.

  • Layer tots evenly over beef mixture.

  • Bake uncovered for 1 hour, until tots are golden and crispy.

  • Sprinkle with Cheddar and scallions. Let rest 10 minutes before serving.

Notes

Resting after baking helps it set for easier slicing.

Swap in your favorite frozen veggies or a different cream soup.

Make ahead and refrigerate before baking for busy nights.

Reheats well in the oven or microwave.
