Tender Carne Asada made with a flavorful marinade and simple grilling method that creates juicy, tender steak with bold flavor.
Ingredients

- 2 lbs skirt steak or flank steak
- 1/2 cup soy sauce
- 1/3 cup fresh lime juice
- 1/4 cup olive oil
- 2 tablespoons sugar
- 6 cloves garlic minced
- 1 teaspoon cumin
- 1 teaspoon ancho chili powder
- 1 teaspoon onion powder
- 1 teaspoon black pepper
- 1 kiwi mashed
Instructions
- Pat steak dry and poke holes with a fork
- Mix soy sauce, lime juice, olive oil, sugar, garlic, cumin, chili powder, onion powder, and black pepper
- Place steak in marinade and refrigerate for 3 to 9 hours
- Add mashed kiwi during the last 30 minutes of marinating
- Preheat grill to high heat until very hot
- Grill steak for 3 to 5 minutes per side until charred
- Remove from grill and rest for 5 minutes
- Slice thinly against the grain and serve
Notes
- Do not leave kiwi in marinade longer than 30 minutes
- Use fresh lime juice for best flavor
- Preheat grill fully before cooking
- Always slice against the grain for tenderness
