  • 1 lb (450 g) beef (flank steak, sirloin, or ground beef)
  • 1 cup (200 g) uncooked rice (white, brown, or cauliflower rice)
  • 2 cups (300 g) mixed vegetables (broccoli, carrots, bell peppers)
  • ½ cup (120 ml) teriyaki sauce (store-bought or homemade)
  • 1 tbsp (15 ml) soy sauce or tamari for gluten-free
  • 1 tbsp (15 ml) sesame oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 1 tbsp cornstarch mixed with 2 tbsp water (optional for thickening sauce)
  • 2 tbsp sesame seeds (optional for garnish)
  • 2 green onions, sliced (optional for garnish)

Instructions

  • Prepare the Rice and Vegetables: Cook the rice according to package instructions. Steam or sauté the vegetables until tender but still vibrant in color. Set aside.
  • Marinate the Beef: Slice the beef against the grain into thin strips (if using steak). In a bowl, mix teriyaki sauce, soy sauce, garlic, and ginger. Add the beef and marinate for at least 30 minutes, or overnight for extra flavor.
  • Cook the Beef: Heat sesame oil in a large skillet over medium-high heat. Remove the beef from the marinade (reserve the marinade) and sear until browned. If using ground beef, cook until fully browned.
  • Make the Sauce: Pour the reserved marinade into the skillet. If desired, add the cornstarch slurry to thicken the sauce. Simmer for 2-3 minutes until the sauce is glossy.
  • Assemble the Casserole: Preheat the oven to 350°F (175°C). In a baking dish, layer the cooked rice, sautéed vegetables, and beef with the sauce. Mix gently to combine.
  • Bake: Cover the casserole with foil and bake for 25-30 minutes, until heated through.
  • Garnish and Serve: Sprinkle sesame seeds and green onions on top for garnish. Serve hot and enjoy!
