Ingredients

- 2 lbs chicken thighs or breasts, cut into 1-inch cubes
- 2 tablespoons cornstarch
- 1 cup water
- 1/3 cup brown sugar
- 1/3 cup soy sauce (low sodium recommended)
- 2 cloves garlic, minced
- 1 tablespoon rice vinegar
- 1/2 tablespoon fresh ginger, minced
- 1 tablespoon honey
- 1/2 teaspoon sesame oil
- 8 skewers
- sesame seeds (optional)
- chopped green onions (optional)
Instructions
- Mix cornstarch and water in a small bowl
- Combine remaining sauce ingredients in a saucepan and add cornstarch mixture
- Bring to a simmer while stirring until slightly thickened
- Remove sauce from heat and let cool completely
- Place chicken in a bag and coat with half of the sauce
- Marinate in the refrigerator for at least 30 minutes
- Thread chicken onto skewers
- Preheat grill to medium heat
- Grill skewers turning every 3 to 4 minutes
- Cook until chicken reaches 165°F internal temperature
- Brush with remaining sauce during final turns
- Remove and serve with sesame seeds and green onions

- Cool the marinade completely before adding to chicken
- Do not overcrowd skewers to ensure even cooking
- Use chicken thighs for juicier results
