Description

Texas Tamale Pie Casserole combines seasoned ground beef, beans, and a cornbread topping baked until golden for a hearty Tex-Mex dinner.


Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 15 ounces black beans, drained and rinsed
  • 10 ounces diced tomatoes with green chilies
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cornmeal
  • 1 cup milk
  • 1 large egg
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup sliced black olives (optional)
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Preheat oven to 375°F and grease a baking dish
  2. Brown ground beef in a skillet over medium heat
  3. Add chopped onion and cook until soft
  4. Stir in beans, tomatoes, and spices and simmer until thick
  5. Spread beef mixture into baking dish
  6. Whisk cornmeal, milk, and egg until smooth
  7. Pour cornmeal mixture evenly over beef
  8. Sprinkle cheese on top
  9. Bake until golden and set

Notes

  1. Drain beans well to avoid excess moisture
  2. Adjust chili powder to taste
  3. Let casserole rest briefly before serving
