Juicy shredded chicken simmers in a creamy garlic-Parmesan sauce and is tossed with tender pasta for a rich, soul-soothing dinner. Perfect for busy weeknights, this easy pasta recipe is hearty, flavorful, and guaranteed to be a family favorite.

Ingredients

Scale
  • 1.5 lbs (680 g) boneless, skinless chicken breasts

  • 1 tsp (3 g) garlic powder

  • 1 tsp (3 g) onion powder

  • ½ tsp (2.5 g) black pepper

  • ½ tsp (2.5 g) salt

  • 2 cups (480 ml) chicken broth

  • 1 cup (100 g) grated Parmesan cheese

  • 1 package (8 oz / 225 g) cream cheese, cubed and softened

  • 1 tbsp (15 g) minced garlic

  • 12 oz (340 g) pasta (penne, rotini, or your choice)

  • ½ cup (120 ml) heavy cream or half-and-half

  • Optional: 2 tbsp (10 g) fresh parsley, chopped, or extra Parmesan for garnish

Instructions

  • Layer the Base: Place chicken breasts in the crockpot. Season with garlic powder, onion powder, salt, and pepper.

  • Add the Creamy Goodness: Pour in chicken broth. Add Parmesan, cubed cream cheese, and minced garlic.

  • Slow Cook: Cover and cook on low for 4–5 hours, or high for 2–3 hours, until chicken reaches 165°F (74°C) and shreds easily.

  • Shred & Stir: Shred chicken with two forks directly in the crockpot. Stir to create a creamy sauce.

  • Cook Pasta: Prepare pasta on the stovetop until al dente. Drain.

  • Finish: Stir cooked pasta and heavy cream into the crockpot. Mix until evenly coated. Garnish with parsley or extra Parmesan. Serve hot.

Notes

Cube cream cheese small to help it melt smoothly.

Add red pepper flakes for a hint of spice.

Toss in spinach or broccoli near the end for added veggies.

Store leftovers for up to 3 days and reheat with a splash of broth or cream.

Freeze chicken and sauce (without pasta) for up to 2 months.
