Description

Easy Taco Soup full of hearty flavor, ready in 30 minutes or slow-cooked for convenience.


Ingredients

Scale

1 pound (500g) lean ground beef

1 small onion, chopped

45 cloves garlic, minced

4 cups (946ml) beef or chicken broth

1 (15 oz) corn, drained

1 (15 oz) black beans, drained and rinsed

1 (15 oz) chili beans in chili sauce

1 (28 oz) crushed tomatoes

1 (4 oz) chopped green chiles

1 tablespoon chili powder

2 teaspoons cumin

1 teaspoon dried oregano

1 teaspoon onion powder

1 teaspoon garlic powder

Salt, pepper, cayenne to taste


Instructions

1. In a large pot, brown the ground beef and onions.

2. Add the garlic and cook for 2 minutes.

3. Add remaining ingredients and cover.

4. Simmer for 15 minutes, stirring occasionally.

5. Serve with toppings of choice.

6. Place raw ground beef in the crockpot for slow cooker version.

7. Add all other ingredients and stir.

8. Cook on high 4-6 hours or low 8-10 hours.

9. Serve with toppings.

Notes

Total time reflects stove-top version.

Freezer friendly for 2-3 months.

Great with sour cream, cheese, tortilla chips, cilantro, or avocado.
