Ingredients
5 large egg yolks (approx. 100 g), beaten
1 (14 oz) can sweetened condensed milk
1/2 cup key lime juice (fresh or bottled)
1 (9-inch) prepared graham cracker crust
Instructions
Preheat oven to 375°F.
In a large bowl, whisk together the egg yolks, sweetened condensed milk, and key lime juice until smooth.
Pour the filling into the graham cracker crust and smooth the top.
Bake for 15 minutes or until the center is just set and no longer jiggles.
Cool at room temperature for 30 minutes.
Refrigerate for at least 1 hour before serving (longer if possible).
Serve chilled with whipped cream and lime slices, if desired.
Notes
Bottled key lime juice is a great substitute for fresh.
Add 1 tsp lime zest for more citrus flavor.
For best results, don’t skip chilling—it helps the pie set perfectly.
