Description

Pesto grilled cheese is an upgraded version of the classic grilled cheese sandwich, packed with fresh, herby pesto. The warm, melted cheese blends perfectly with the vibrant pesto while the bread turns golden and crispy. It’s simple but flavorful and a must-try twist on a comfort food classic.

Ingredients

Scale
  • 2 slices of bread (sourdough, Italian, or whole grain)

  • 2 tablespoons butter (or garlic butter)

  • 2 tablespoons pesto (store-bought or homemade)

  • 2 types of cheese (mozzarella, provolone, cheddar, havarti, or gouda)

  • Optional: tomato slices, spinach, or sundried tomatoes for extra fillings

Instructions

  • Spread butter (or garlic butter) on the outside of each slice of bread.

  • Lay one slice of bread, butter side down, and spread a layer of pesto on the inside.

  • Add a layer of cheese (mix different cheeses for extra flavor).

  • Add any extras like tomatoes or spinach, if desired.

  • Place the second slice of bread on top, butter side up.

  • Heat a skillet over medium heat. Cook the sandwich for 2-3 minutes on each side, pressing gently with a spatula, until golden brown and the cheese melts.

  • Let the sandwich rest for a minute before slicing and serving.

Notes

If using store-bought pesto, ensure it contains fresh basil, olive oil, and Parmesan cheese without fillers.

For a vegan version, use dairy-free cheese and pesto.

Try adding extra veggies like mushrooms or roasted red peppers for a different twist.
