For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted

For the Cheesecake Filling:

  • 2 (8 oz) packages of cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract

Instructions

  • Preheat Oven: Preheat your oven to 325°F (163°C) and line an 8×8-inch baking dish with parchment paper.
  • Prepare the Crust: In a bowl, mix the graham cracker crumbs, sugar, and melted butter until combined. Press the mixture firmly into the bottom of the prepared baking dish.
  • Bake the Crust: Bake for 8–10 minutes, then remove from the oven and let it cool slightly.
  • Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  • Bake the Cheesecake: Pour the cheesecake filling over the baked crust and smooth the top. Bake for 30–35 minutes, or until the center is set.
  • Cool & Chill: Let the cheesecake bars cool to room temperature, then refrigerate for at least 2 hours before slicing.
