For the Crust:
- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- ½ cup unsalted butter, melted
For the Cheesecake Filling:
- 2 (8 oz) packages of cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
Instructions
- Preheat Oven: Preheat your oven to 325°F (163°C) and line an 8×8-inch baking dish with parchment paper.
- Prepare the Crust: In a bowl, mix the graham cracker crumbs, sugar, and melted butter until combined. Press the mixture firmly into the bottom of the prepared baking dish.
- Bake the Crust: Bake for 8–10 minutes, then remove from the oven and let it cool slightly.
- Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Bake the Cheesecake: Pour the cheesecake filling over the baked crust and smooth the top. Bake for 30–35 minutes, or until the center is set.
- Cool & Chill: Let the cheesecake bars cool to room temperature, then refrigerate for at least 2 hours before slicing.
- Serve & Enjoy: Cut into bars and enjoy!
Notes
- For extra flavor, add a fruit topping, chocolate drizzle, or caramel sauce.

- For a firmer crust, press the crumbs down firmly using the bottom of a measuring cup.
