Instructions

  • Make the Toffee Caramel Sauce:

    • In a medium saucepan, melt the butter over medium heat.
    • Stir in the brown sugar and bring it to a simmer, cooking for 2-3 minutes until the sugar has dissolved.
    • Carefully add the heavy cream and bring the mixture back to a simmer. Cook for 3-4 minutes, stirring constantly, until the sauce thickens slightly.
    • Remove from heat and stir in the vanilla extract and salt. Set aside to cool slightly. The sauce will thicken as it cools.
  • Make the Pancakes:

    • In a large bowl, whisk together the flour, sugar, baking powder, and salt.

    • Pour the wet ingredients into the dry ingredients and stir gently until just combined. The batter should be lumpy.
